Whitestone Cheese Oamaru Blue is the 2023 Dairy Champion.

Remove the cheese from a wheel of Whitestone Windsor Blue without damaging the outer rind and put into a large mixing bowl. Add enough-late harvest dessert wine to create a cottage cheese-like texture. Return the mixture to the scooped-out wheel and serve with crusty bread.
