Recipe: Two Raw Sisters’ Chickpea Cauliflower Burgers


This flavour-packed vegetarian patty is anything but boring.

Who doesn’t love a good burger? A lot of veggie burgers are filled with beans and rice and not much else. We have loaded our patties with charred cauliflower, onions cooked in paprika, garlic and cumin, and buttery chickpeas. Not only are they delicious between a sourdough bun filled with avocado, caramelized onions, beetroot and cashew cheese, but they are also great in salads chopped up as falafels.

Makes 10 burger patties

INGREDIENTS

½ cauliflower
1 tsp sea salt
1 tbsp coconut oil, melted, plus some to drizzle and cook
1 onion, diced
2 cloves garlic, crushed
1 tsp ground coriander
1 tsp ground smoked paprika
1 tsp ground cumin
good pinch sea salt
2 x 400g cans of chickpeas, drained and rinsed (you can also use lentils, butter beans or cannellini beans)
3 tbsp chickpea flour
small handful fresh coriander, roughly chopped
sea salt
black pepper

sourdough buns or bread (gluten-free if you prefer)
lettuce or collard leaves
avocado slices
caramelised onions
sprouts
tomato relish (see page 101)
pesto
beetroot slices

METHOD

Preheat the oven to 200ºC.

Finely chop the cauliflower, drizzle with coconut oil and salt, then roast in the oven until golden and crispy, about 20–25 minutes.

While the cauliflower is cooking, melt the coconut oil in a pan and sauté the onion until soft. Add the garlic, coriander, smoked paprika and cumin, and continue to cook over a medium heat for 2–3 minutes. Set aside to cool.

In a food processor, put the onion mix, chickpeas, chickpea flour, fresh coriander, and salt and pepper. Process until the texture is mainly smooth, with a few little bits of whole chickpeas still visible.

Add the roasted cauliflower and pulse until combined, leaving the cauliflower in small, chunky pieces. Place the mixture in a bowl. Using a ¼ cup measuring cup, divide the mixture into 10 patties.

Heat coconut oil in a pan and add several patties, cooking until golden on both sides. Repeat until all of the patties have been cooked. Place the browned patties on a lined baking tray and bake in the oven for a further 10 minutes.

Serve on burger buns or lettuce cups, then add all your favourite layers to build your burger.
