Recipe: Mussels with Just Fresh Co Turmeric & Ginger Coconut Broth


Turmeric root provides a delicious earthy flavour; ginger adds warming heat in this aromatic broth.

Just Fresh Co Turmeric Juice is a 2023 Farro Earth category gold medal winner. Just Fresh Co Lime Juice won a bronze in the same category.

Serves: 6, as a sharing plate

INGREDIENTS

3 spring onions, roughly chopped
1 shallot, roughly chopped
3 garlic cloves
2 fresh makrut lime leaves
1 tablespoon Just Fresh Co Ginger Juice
1 tablespoon Just Fresh Co Turmeric Juice
1 teaspoon brown sugar
bunch of coriander, roots and stalks for broth, leaves reserved for garnishing
400ml can coconut milk
1-2 teaspoons chicken stock powder, to taste
1kg green-lipped mussels, scrubbed and debearded
1 teaspoon fish sauce (to taste)
3 tablespoons Just Fresh Co Lime Juice (to taste)
1 red chilli, thinly sliced, for garnishing

METHOD

Put the spring onions, shallot, garlic, makrut lime leaves, ginger and turmeric juices, sugar, coriander roots and stalks into a blender and whiz into a smooth creamy paste. Transfer to a saucepan and add coconut milk, stock powder and 50ml of water. Simmer on low heat.

Prepare the fresh green-lipped mussels and transfer to the saucepan with the broth.

Steam the mussels for approx 5-7 minutes – just enough to open the shells. Discard any unopened mussels.

Add fish sauce and lime juice to taste and garnish with fresh coriander leaves and sliced chillies.
