Recipe: Limoncello Spritz


Limoncello mixed with Prosecco and soda water, garnished with a sprig of honey-spiked rosemary — sunshine in a glass.

Serves: 6

INGREDIENTS

6 sprigs rosemary
1½ tablespoons runny honey
1 lemon, thinly sliced
300ml Limoncello
450ml Prosecco or sparkling wine
300ml soda water

METHOD

Put the rosemary sprigs into a shallow dish, drizzle over the honey, massaging it in to get even coverage.

Fill six glasses with ice (use as much or as little as you like) and add a lemon slice. Measure 50ml of Limoncello into each glass, followed by 75ml Prosecco and 50ml of soda water.

Garnish with a sprig of dressed rosemary.
