Recipe: Apple Crumble Pancakes


Serves 4–6  |  Prep Time 20 minutes  |  Cook Time 45 minutes

Granted these pancakes have a few steps to them, but prepare the batter and the crumble the night before and you’ll just have the pancakes to cook and apples to fry and pretty soon you’ve got breakfast fit for a queen!

INGREDIENTS

Pancakes

  • ½ cup Greek yoghurt
  • 3 eggs
  • 2/3 cup milk
  • 1 tsp vanilla extract
  • 2 tbsp brown sugar
  • 1¼ cups flour
  • 50 g butter, melted
  • 1½ tsp baking powder

Crumble Topping

  • ¼ cup flour
  • ¼ cup oats
  • ¼ cup almonds
  • 1 tsp mixed spice
  • 4 tbsp brown sugar
  • 70 g butter, cubed

Apples

  • 50 g butter
  • 2 tbsp brown sugar
  • ½ tsp cinnamon
  • ½ tsp ginger
  • 5 red apples, cored, sliced

To serve

  • mascarpone
  • maple syrup

 

METHOD

The night before you make these pancakes, put the yoghurt, eggs, milk, vanilla and brown sugar into a large bowl and whisk until smooth. Add in the flour and whisk again until no lumps remain and a smooth batter is formed. Cover and refrigerate overnight.

When ready to make the pancakes, drizzle the melted butter into the batter while whisking continuously then stir in the baking powder. Heat a heavy-bottomed frying pan, add in a little butter then cook the pancakes until golden brown on each side. Put the cooked pancakes in a low oven to keep warm as you go.

To make the crumble topping, preheat the oven to 180˚C and line a baking tray with baking paper. Put all the ingredients into a food processor and process until it resembles coarse breadcrumbs. Tip out onto the baking tray and cook for 15–17 minutes or until golden brown, turning the mixture a few times as it cooks. Remove from the oven and set aside.

For the apples, heat the butter, brown sugar and spices in a heavy-bottomed frying pan over a medium-high heat then add in the apples and cook for 15 minutes or so until soft and cooked through.

To assemble, put a pancake onto each plate, spread over the mascarpone, scatter with some crumble topping then layer over the sliced apple. Repeat with another pancake or two depending on the appetites of those you are serving! Drizzle with maple syrup before serving.
