Muesli Bars


Crunchy, chewy, and just the right amount of sweet, these nutty oat bars are the ultimate homemade snack. Packed with seeds, honey, and a drizzle of dark chocolate, and ready in under 30 minutes!

Makes 15 bars, Prep Time 10 minutes, Cook Time 20 minutes

¾ cup oats

¾ cup cashew nuts, roughly chopped

¾ cup desiccated coconut

¾ cup sunflower seeds

¾ cup raisins

1½ tsp cinnamon

pinch sea salt

75 g peanut butter

50 g butter

175 g honey

30 g dark chocolate, melted

Preheat the oven to 180°C and line a 20 x 20 cm square slice tin with baking paper. Put the oats, cashew nuts, coconut and sunflower seeds into a large roasting dish and bake for about 15 minutes or until golden brown, stirring frequently as they burn easily. Once golden remove from the oven and stir in the raisins, cinnamon and sea salt. 

In a heavy-bottomed saucepan over a medium-high heat melt together the peanut butter, butter and honey. Bring to the boil, then simmer for 2 minutes, stirring and scraping the bottom of the pot the whole time. If you stop stirring it will quickly burn. Remove from the heat, tip in the dry mixture, then stir well. Tip out into the lined tin and using a spatula or wet spoon press the mixture firmly into the tin. Drizzle over the chocolate, then leave to set before slicing into bars.
