Cinnamon maple glazed nuts


Makes 5 cups  |  Prep 10 minutes  |  Cook 20–25 minutes

These nuts are deliciously crunchy, cinnamon spiked and just sweet enough. If you like things a little spicy then add in a teaspoon of chilli flakes to the sugar mix.

INGREDIENTS

2 cups almonds

1½ cups walnuts

1½ cups Brazil nuts

1 egg white

3 tbsp maple syrup

5 tbsp sugar

2 tsp cinnamon

1½ tsp sea salt

 

METHOD

Preheat the oven to 180˚C and line a baking tray with baking paper. Put the nuts into a large bowl and give them a good mix. Whisk the egg white and the maple syrup until foamy then pour this mixture over the nuts. Put the sugar, cinnamon and salt in a bowl and mix well, then sprinkle this over the nuts, mixing well to ensure all the nuts are coated in the mixture. Pour the nuts out onto the baking tray and spread out in one layer. Bake for 20–25 minutes, stirring several times. They are done when they are golden brown and crunchy.
