Recipe: Grilled Marshmallows with Rockmelon & Honey Syrup


Making marshmallows from scratch is a fun way to get kids in the kitchen.

This is a great recipe for kids. The only tricky part is the gelatin powder as there are many different brands, so the amount required to set the marshmallow may differ slightly from what I’ve got here. If you’re worried it might not set, add in another half a teaspoon to be sure. If you want to get a bit fancy, divide the mix in Step 5, and add food colouring, then put each colour in its own tray to set.

Time: 25 minutes (not including setting time)

INGREDIENTS

3 tsp gelatine powder
¼ cup warm water
¾ cup sugar
¼ cup glucose
¼ cup water
pinch salt
½ tsp vanilla paste
1 rockmelon, peeled and cut into wedges
handful mint leaves to garnish

METHOD

Line a deep loaf or baking tin with plastic wrap and spray with cooking spray. Dissolve the gelatine in the first measure of warm water.

Combine the sugar, glucose, salt, vanilla, and second measure of water in a saucepan. Bring to the boil, then reduce the heat and cook for 1 minute. Add the dissolved gelatine and mix.

Transfer the hot mixture to a mixer bowl with a whisk attachment, and beat on high speed for 12 minutes until thick and cool. Pour into the prepared tin, smooth
the top, and refrigerate until set, around 5-6 hours or so.

Use a hot, wet knife to cut the marshmallow into 3x3cm cubes. Dip the knife into hot water between each cut. Thread 2-3 pieces of marshmallow onto skewers and grill until golden.

To serve, arrange marshmallow skewers and rockmelon wedges on a serving plate. Drizzle with the honey syrup and garnish with mint leaves.

Honey Syrup

INGREDIENTS

1 tbsp honey
½ tsp vanilla paste
juice of 2 limes

METHOD

Put all the ingredients in a small saucepan and bring to a boil. Simmer for 2 minutes, then remove from the heat.
