Recipe: Make sourdough crumpets from excess sourdough starter

Feeding your sourdough starter with fresh flour and water is inevitable to keep it healthy, even if you can’t (or don’t feel want to) use the discarded concoction. That’s why Homegrown Kitchen author Nicola Galloway, whose honorary third child happens to be a sourdough starter, created an tasty way to avoid starter waste.

Sourdough Crumpets

INGREDIENTS

¾ cup sourdough starter
¼ teaspoon baking soda
a pinch of salt
a pinch of sugar

METHOD

In a bowl combine the starter with baking soda, salt and sugar. Mix well and cook immediately while the soda is active.

Drop spoonfuls of the batter into a hot skillet and cook until golden on both sides.

Makes 5 to 6 crumpets
