Recipe: Kindness Kisses for World Kindness Day


How to spread kindness, do good and eat well – all at the same time.

Do you know how to spread kindness? The members of Good Bitches Baking – a nationwide charity devoted to delivering sweet treats to people in need of cheering up – certainly do. Its founders, Nic Murray and Marie Fitzpatrick, estimate that their 2100 volunteer “good bitches” have created more than 700,000 “moments of kindness” since the organization was formed in 2014.

Now, in time for World Kindness Day (November 13), they’ve joined forces with nut butter maestros Fix & Fogg and freeze-dried fruit whizzes Fresh As to create a Kindness Spread.

The limited-edition packs ($20 via their website) include a jar of chocolate hazelnut butter, a packet of Kindness Sprinkles (freeze-dried raspberry crumbs) and impossibly cute stickers.

“We want to get the message out that it’s cool to spread kindness,” Nic says. “You can even spread it on toast.”

Proceeds will go towards programmes designed to encourage more altruism in communities.

Kindness Kisses

Preparation time: 15 mins
Cooking time: 18 to 20 mins

INGREDIENTS

175g unsalted butter, softened
⅓ cup raw caster sugar
200g ground almonds (or a mixture of ground almonds and ground hazelnuts)
finely grated zest of 1 lemon
1 cup + 1 tablespoon plain flour
½ cup Kindness Spread
1-2 tablespoons freeze-dried raspberry crumbs

METHOD

Heat the oven to 160°C (fan) or 180°C (regular). Line two baking trays with baking paper and set aside.

Put the butter and sugar in a food processor and whiz to mix. Add the ground almonds, lemon zest and flour and pulse until combined. Alternatively, you can do this in a mixing bowl: cream the butter and sugar, then add the dry ingredients and mix again (you can use your hands here).

Pinch off teaspoonfuls of the dough and roll into balls about the size of a large marble. Place on the trays and flatten slightly into discs.

Bake for 18 to 20 minutes, until the biscuits are golden brown. Leave on the trays for a couple of minutes to cool, then transfer to a wire rack to cool completely.

When they’re cold, sandwich pairs of the biscuits together with a generous dollop of Kindness spread and a sprinkle of freeze-dried raspberry crumbs. Store in an airtight container.
