2 apple stevia recipes: Apple cake and apple crumble


Put your stevia to good use with Jane Wrigglesworth’s cozy autmn apple recipes. 

RECIPE: APPLE CRUMBLE (SUBSTITUTING SUGAR WITH STEVIA)

Ready in 45 minutes
Serves 2

INGREDIENTS 

2 apples, sliced
50g butter
1 tsp raw stevia powder
⅔ cup flour
2 tsp cinnamon powder

METHOD

Preheat the oven to 190°C. Place apple slices in an oven-proof dish and sprinkle with half a teaspoon of stevia. Rub the butter into the flour until it forms a breadcrumb-like consistency.

Mix the remaining stevia and cinnamon into the butter-flour mixture. Sprinkle the crumble over the apples. Place in the oven and bake for 30-35 minutes until the crumble has a light brown, crunchy texture. Serve with cream or natural yoghurt.


RECIPE: APPLE CAKE (SUBSTITUTING SUGAR WITH STEVIA)

APPLE CAKE

Ready in 90 minutes
Serves 2

INGREDIENTS 

2 medium Granny Smiths (or other cooking apples)
100g butter, melted
1 large egg
1 cup all-purpose flour
¼ cup mesquite powder
1 tsp raw green stevia powder
1 tsp cinnamon
1 tsp mixed spice
1 tsp baking soda

METHOD

Preheat the oven to 180°C and grease a 20cm (8 inch) baking tin. Quarter apples (unpeeled), place in a food processor, and whiz until apples are lightly chopped. Add the melted butter and egg and process until mixed. Add the remaining ingredients and process until everything is mixed through – don’t overdo it.

Pour the batter into a prepared baking tin and bake for 45 minutes, or until a skewer inserted into the middle of the cake comes out clean. Leave 5 minutes before turning out onto a cooling rack.
