Recipe: Cacao nib bliss balls

These cacao bliss balls are a yummy sweet treat – without the guilt.

INGREDIENTS
¾ cup (150g) pitted medjool dates or dried dates
½ cup ground almonds
1 tablespoon coconut oil or favourite nut butter
½ cup cacao nibs
½ cup sultanas
½ cup dried cranberries
¼ cup desiccated coconut

METHOD
If using dried dates, soak for about 15 minutes in warm water, then drain.
In a food processor blend the dates, almond meal, coconut oil or nut butter.
Add cacao nibs, sultanas and cranberries.
Blend mixture until well combined and a desired texture.
Roll mixture into bite-sized balls and roll in desiccated coconut.
Place bliss balls on baking paper and chill in the fridge for half an hour.
